EXTRA SPICY JOLLOF RICE
Ingredients
- 1 pack Ayoola Jollof Rice
- 1 pack Ayoola Hot & Spicy Flavour Noodles
- 300g chicken thigh, cut into strips
- 1 tbsp suya spice (or chilli + ground peanut + paprika mix)
- 1 red pepper, sliced
- 1 red onion, sliced
- 2 tbsp oil
- Fresh coriander, to garnish
- 1 lime, cut into wedges
METHOD
MARINATE & COOK THE CHICKEN:
- Toss chicken strips in suya spice, a pinch of salt and 1 tbsp oil rub it in well and let it sit 10 minutes if you have time.
- Heat a pan until smoking hot, then sear the chicken for 6 – 7 minutes, turning once, until charred at the edges and cooked through.
- Rest on a plate the char is what gives this dish its smoky suya flavour.
PREPARE THE JOLLOF RICE:
- Cook the Ayoola Jollof Rice pack per instructions.
- Fluff with a fork and keep warm, covered, while you finish the rest.
COOK THE NOODLES:
- Bring water to a boil and cook the Ayoola Hot & Spicy Flavour Noodles per pack instructions.
- Drain well you want them just tender, not soft, so they hold up against the rice.
BRING IT TOGETHER:
- Layer the jollof rice into the base of each bowl.
- Pile the noodles on top, then scatter over the suya chicken, sliced red pepper and red onion.
- Finish with a generous handful of fresh coriander and a lime wedge on the side.
