EXTRA SPICY JOLLOF RICE

Ingredients

  • 1 pack Ayoola Jollof Rice
  • 1 pack Ayoola Hot & Spicy Flavour Noodles
  • 300g chicken thigh, cut into strips
  • 1 tbsp suya spice (or chilli + ground peanut + paprika mix)
  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp oil
  • Fresh coriander, to garnish
  • 1 lime, cut into wedges

METHOD

MARINATE & COOK THE CHICKEN:

  • Toss chicken strips in suya spice, a pinch of salt and 1 tbsp oil rub it in well and let it sit 10 minutes if you have time.
  • Heat a pan until smoking hot, then sear the chicken for 6 – 7 minutes, turning once, until charred at the edges and cooked through.
  • Rest on a plate the char is what gives this dish its smoky suya flavour.

PREPARE THE JOLLOF RICE:

  • Cook the Ayoola Jollof Rice pack per instructions.
  • Fluff with a fork and keep warm, covered, while you finish the rest.

COOK THE NOODLES:

  • Bring water to a boil and cook the Ayoola Hot & Spicy Flavour Noodles per pack instructions.
  • Drain well you want them just tender, not soft, so they hold up against the rice.

BRING IT TOGETHER:

  • Layer the jollof rice into the base of each bowl.
  • Pile the noodles on top, then scatter over the suya chicken, sliced red pepper and red onion.
  • Finish with a generous handful of fresh coriander and a lime wedge on the side.
